Mason Jar Chicken & Roasted Veggie Salad

Mason jars are ALLLLLL the Pinterest-rage for a reason. Packing salads in them is cute AND genius. Basically, the total package. It keeps all your mix-in’s separate until you’re ready to, well, mix in. Plus. It just looks so good. Which. Let’s admit. Is pretty important. We’ll take any motivation to eat a salad we can get.
Featuring: Everything Hummus

Ingredients:
- Serves 3
- 6 tablespoons of Tribe Everything Hummus
- 3 cups quinoa, cooked
- 4 1/2 cups kale, chopped
- 1 1/2 cups grilled chicken, cubed
- 3 cups roasted beets, sliced
- 2 1/4 cups roasted sweet potatoes, cubed
Instructions:
Divide ingredients evenly across three 32-ounce Mason jars. Place one cup of quinoa as the base layer. Layer with kale, beets, sweet potatoes and chicken. Top with kale and Tribe Everything Hummus. You don’t even need dressing. Because, like we said, Everything Hummus.
