Yeah. We were confused at first too. Then we tried these bad boys. Then we were even more confused. Because apparently they aren’t that bad for you? But then we had another bite and stopped being confused entirely. Because why try to make sense of something that just feels so right, ya know? Go with the delicious flow.

Ingredients:

  • 1/2 cup Tribe Classic Hummus
  • 2 eggs
  • 1/2 cup maple syrup (for more cake like consistency use ½ cup)
  • 1/2 cup walnut butter
  • 1/4 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup gluten free all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup walnuts, chopped
  • 1 cup dairy-free chocolate chips
  • shredded coconut (optional)

Instructions:

Preheat oven to 350 degrees F. Grease an 8x8 square baking pan with coconut oil. In a large bowl, whisk the eggs. Add in maple syrup, walnut butter , hummus, sugar and vanilla extract. Stir to combine. In a medium sized bowl, mix together the cocoa powder, flour, salt and baking powder. Slowly incorporate the dry ingredients into the wet ingredients. Add the chopped walnuts and chocolate chips and mix well. Pour batter into prepared pan and bake in the preheated oven for 25 minutes or until a toothpick comes out clean. Let cool completely. Sprinkle with shredded coconut.
