Mediterranean Cauliflower Pizza

YOU’RE GONNA EAT THIS UP

Yes. This recipe says “Serves 2”. But. Honestly. We see this as more of personal pizza. It’s cauliflower crust. It’s topped with hummus. It’s good for you. It’s delicious. Why not. Sure. Your elementary school teacher may be disappointed in you for not sharing. But, ya know what Mrs. Smith? Adulting is hard and sometimes it’s every person and their personal pizza for themselves.

Ingredients:

  • Serves 2
  • ¼ cup Tribe Mediterranean Style Hummus
  • cauliflower crust (homemade or store-bought)
  • small handfuls of arugula
  • 1/8 cup sun-dried tomatoes, chopped
  • 1/8 cup pitted kalamata olives
  • 1/8 cup of a red onion, finely chopped
  • 1 tablespoon of dried parsley
  • 1 tablespoons of pine nuts optional
  • 2 teaspoon extra virgin olive oil
  • a squeeze of fresh lemon juice

Instructions:

Bake your cauliflower crust. You can use this awesome recipe to make your own. But if you don’t have time, (Who does?), just get store-bought. No shame. Cauliflower crust is trendy, so bets are your grocery store has it. Probs in the frozen aisle. Anyways. Cook the crust until it’s *almost* done. That’s key. Spread that heavenly hummus evenly over the crust. Then top it with arugula, sun-dried tomatoes, kalamata olives, parsley, red onion and pine nuts. Then, place the pizza back in the oven for 10 minutes so all those flavors can bake and blend together. See. We said •almost* for a reason. We weren’t suggesting you eat undercooked cauliflower crust. We’re too tight to do you like that.
