Grilled Flatbread Tribe Hummus Pizza
A twist on a traditional pizza, this hummus pizza makes a great lunch, dinner or appetizer. Topping choices are almost endless, but we love the use of the slightly more unconventional leeks and fennel for a really fresh taste. Visually, this pizza is a stunner!
Ingredients
- 8-oz tub of Tribe Roasted Garlic Hummus
- 1 leek, grilled and thinly sliced
- 6-10 kalamata olives, pitted and halved
- 1 yellow pepper, roasted and chopped
- 1/2 cup Feta cheese
- 1 tsp red chili flakes
- 1 tbsp fennel fronds
- 1 flatbread pizza crust (such as Fabulous Flats)
- 2 tbsp olive oil
Directions
- To prepare the crust, simply brush lightly with olive oil and grill for 1-2 minutes on each side.
- Grill the leek lightly on all sides.
- Grill the yellow pepper until blackened, rotating throughout grilling to ensure blackening on all sides (you can also do this in the oven).
- Submerge the pepper in a bowl of ice water; after it has cooled simply peel away and discard the blackened skin.
- Spread desired amount of hummus on grilled flatbread crust and top with all remaining ingredients.
- Bake in a preheated 400-degree oven until warm throughout, about 10-15 minutes.
