Eggplant Hummus Veggie Panini

Paninis are hip sandwiches these days, and with good reason. They are easy to make, most any ingredient can be used, and they taste delicious. Move over grilled cheese! Try one of these on your next lunch break.

Ingredients

  • 1 8-oz tub of Tribe Roasted Eggplant Hummus
  • Roasted red pepper
  • Zucchini, thinly sliced lengthwise
  • Avocado, sliced
  • Red onion, thinly sliced

Directions

  • Preheat your panini grill. Brush the bottom of each slice of bread with olive oil.

  • For the Veggie Panini, spread the eggplant or other hummus on one slice of bread, then top with a roasted red pepper, zucchini, avocado, and red onion. Add the other slice of bread to make a sandwich.

  • Grill for 2-4 minutes, or until the bread is toasted and the panini is heated through. Remove, cut in half and enjoy!
