Baked Halibut with Crispy Hummus and Herb Crust

Ingredients

  • 4 - 6 oz halibut fillets
  • ½ cup Tribe classic hummus
  • ¼ cup coarse breadcrumbs
  • ¼ cup roughly chopped herbs (i.e: parsley, basil, dill)
  • Zest of 1 lemon
  • extra virgin olive oil for drizzling
  • sea salt and black pepper
  • lemon wedges to garnish

Directions

  • Preheat the oven to 400 degrees F.

  • Rinse and dry the cod fillets on paper towels.

  • Season with salt and pepper.

  • Place fish in a baking dish skin side down.

  • Spread ¼ of the hummus on each fillet.

  • Mix together the breadcrumbs with the herbs.

  • Season with salt and pepper.

  • Pat breadcrumb mix on top of each fillet.

  • Drizzle with olive oil.

  • Bake for 20 mins.

  • Plate the fish, garnish with lemon wedges with your favorite side.
