Baked Halibut with Crispy Hummus and Herb Crust

Ingredients
- 4 - 6 oz halibut fillets
- ½ cup Tribe Origins classic hummus
- ¼ cup coarse breadcrumbs
- ¼ cup roughly chopped herbs (i.e: parsley, basil, dill)
- Zest of 1 lemon
- extra virgin olive oil for drizzling
- sea salt and black pepper
- lemon wedges to garnish
Directions
- Preheat the oven to 400 degrees F.
- Rinse and dry the cod fillets on paper towels.
- Season with salt and pepper.
- Place fish in a baking dish skin side down.
- Spread ¼ of the hummus on each fillet.
- Mix together the breadcrumbs with the herbs.
- Season with salt and pepper.
- Pat breadcrumb mix on top of each fillet.
- Drizzle with olive oil.
- Bake for 20 mins.
- Plate the fish, garnish with lemon wedges with your favorite side.
